A semi-firm, Alpine-style, cow's milk cheese with a nutty flavor and smooth texture and has a washed rind. Younger and softer than most Alpine cheeses, Raclette is great in fondue, melted over potatoes and bread, or served as a table cheese.

Wine Pairings:  Dry white wine such as Pinot Gris
