This "marble" cheese blends two American originals: Monterey Jack and Colby. Together, they create a mild, slightly tangy, marbled cheese that's perfect for shredding or snacking. It is generally sold in a full-moon or a half-moon shape when it is still young and mild in flavor. The cheese has a semi-hard texture.
The flavor of Colby Jack varies from mild and smooth, to lightly sweet, to sharp and tangy. It groups well with deli meat, sandwiches, soups, sauces, burgers, dark breads like pumpernickel and rye, omelets, casseroles, steamed vegetables, baked potatoes and fruits like apples and pears. Also, due to its good melting capabilities, it is the perfect choice for casseroles and nachos.
Pair well with Zinfandel, Cabernet Sauvignon, and Shiraz wines.
